7th World Tapas Competition
City of Valladolid
1 The Company for the Promotion of Tourism of Valladolid, S.L. (SMTVA) in collaboration with the Association of Hospitality of Valladolid, announces the Seventh World Tapas Competition, for active professionals of hospitality establishments around the world.
2 Each participant may submit a single, unpublished tapa, whose ingredients and elaboration must be reflected on the attached official form, accompanied by a photograph of the tapa, a questionnaire with the personal data of the author of the tapa and the establishment it represents. Also, a video, of less than a minute and a half of duration must be sent. The video must follow the sample attached to this form. (Link to the sample of the video).
3 All documents can be sent in Spanish or English through the links shown on this form. Only requests sent through this channel will be handled. (Link to the form).
4 In order to compete under the same conditions, the cost of the ingredients of the recipe must not exceed the value of 1.80 euros (1.90 $ USA). Given that the participant does not have access to market prices in Spain, the selection committee may deem appropriate to contact the participant, in case that, when evaluating the recipe sent, there is any deviation in the cost.
5 The registration is open from July 3rd 2023, and will close at midnight on September 20th 2023. There is no registration fee for the contestant.
6 A jury composed of professional chefs, members of the Hospitality Association of Valladolid, the technical organization of the championship and the SMTVA, will select, from the recipes received up to a maximum of 15 foreign finalists and 2 alternate contestants to participate in person in the final phase. To the total of selected foreign participants will be added the winner of the National Pinchos and Tapas Competition of Spain from the previous year, being in total 16 finalists. In case the Spanish candidate is unable to participate or resigns, then the runner-up will be invited and so on until a candidate representing Spain is confirmed.
The winners of state/continental contests, held between june 2023 and september 2023, may be considered finalists, provided that the organizing entities of said contests have signed the appropriate collaboration agreement with SMTVA, assuming the general principles of quality and professionalism of the National Contest of Pinchos and Tapas de Cocina city of Valladolid, in its regulations and execution, both issues that will have to be verified by the Technical Direction of the world championship. The territories with which there are current agreements will be published on the official website of the World Championship, so that potential contestants from those territories can access the World Championship through this route.
7 All the candidates selected for the final phase will be summoned in Valladolid, during the days 6th, 7th and 8th of November, with hotel accommodation assigned and paid for four nights, from Sunday 5th to Thursday 9th, unless the logistics of the flights force the contestant to spend more nights. All participants will be sponsored by a local restaurant.
8 The travel expenses will be covered by the organization of the contest, which will also coordinate the technical direction of the Competition, its management and presence in Valladolid during all the days of the event.
9 The participant agrees to comply with the rules and must follow all the indications given, as well as and the agenda of the Competition. The agenda will specify all the activities and places in which the participants must be in attendance. All these rules are mandatory.
10 Each selected candidate will be assigned a support restaurant (partner) in Valladolid with which the candidate will have to stablish contact in advance to provide all the necessary information to prepare the recipe. During all public events and the final phase of the World Tapas Competition, it is mandatory for candidates to wear the uniform that will be selected including the award ceremony. Once the selection process of the finalists has been carried out, the order of participation of the contestants will be determined by a draw held two weeks before the Competition.
11 Each of the participants will execute 11 tapas in a maximum period of 25 minutes. Those tapas are intended for each of the jurors and 1 for the press.
12 The operation of the Competition and the assurance of equal opportunities for each contestant requires a rigorous schedule. Each minute of delay in the delivery of the tapa preparations to the jury will be penalized with 2 points in the total point calculation of the judges. The candidate who exceeds the assigned time by 5 minutes will be disqualified. The timekeeping function of each finalist will be exercised by the secretary of the jury in coordination with the technical direction of the Competition. In case that any of the contestant exceed the stipulated time, the jury secretary will propose the sanction to the president of the jury.
13 The jury of the final phase of the Competition will be appointed by the Technical Director and composed of at least 7 prestigious specialists in gastronomy, under the chairmanship of a renowned Chef.
14 A hospitality professional, appointed by the Hospitality Association of Valladolid will act as an observer juror, who, at the end of the live session, will inform the secretary and the president of the jury of any possible incidents detected during the elaboration of each of the tapas, that is: unjustified or fraudulent pre-elaborations, collaboration outside those of his intended assistant or assigned partner or presence of more than one collaborator in the assigned workspace. In any case, it is expressly prohibited the presence of more than one assistant in the assigned workspace, at the risk of disqualification. Also, the interaction of the contestant with the jury, outside the space where the tapa will be elaborated, is prohibited unless required by the president of the jury.
15 The judges will place their scores on the official scoring sheets, in paper or digitalized, and will evaluate the following concepts: Taste (40 points), Originality (30 points), Presentation (20 points) and Commercial Application of the tapa (10 points).
16 At the end of the competition, the jury will meet, in a private venue, unrelated to any outside influence, The Technical Director, the observing Jury and the secretary will attend the count, who will draw up the minutes, which will be signed by the President, Technical Director and Secretary.
17 The president of the Jury will enjoy an extra casting vote in case of ties or discrepancies. The final result will not be subject to appeal.
18 The mathematical sum of the points awarded to each contestant will determine the order of classification of the Competition. Among the best-rated finalists, the members of the jury will determine to whom will correspond each of the awards provided by the competition:
- First Place: Artistic Award and 10.000 euros.
- Second Place: Artistic Award and 5.000 euros
- Third Place: Artistic Award and 2.500 euros.
In addition, at the discretion of the permanent jury, another 3 or more awards may be granted –with or without financial endowment unless they are expressly financially sponsored–, to reward concepts or unique characteristics of those tapas not distinguished with the first 3 prizes.
19 All participants must agree to attend to all national and international press requests during the Competition. They also must agree to promote the Competition in their country of origin through their social media networks and through specialized press. The organization reserves the right to establish a special prize for the participant who has achieved a greater promotion of his/her participation in the competition.
20 The World Tapas Champion 2023 will remain in Valladolid on behalf of the organization, at least all day after the closing of the Competition, both, to attend to press commitments and to provide technical assistance to the establishment of Valladolid that partnered with the winner. Likewise, the participant agrees to participate in the cooking demonstration of his/her tapa that will be held on Thursday, November 9th, before the press and other professionals.
21 The restaurants of Valladolid are authorized by the authors of each of the participating tapas to permanently offer the public the winning tapas among their culinary offerings, advertising their status as champion tapas in the World Tapas Competition and mentioning the author of the tapa.
22 The organization will make all its efforts so that the celebration of the Competition is carried out normally and in accordance with the provisions of these Regulations and the uses and customs generated throughout its history, although it reserves the right to modify, if necessary, some of the provisions of this Regulation to adapt to the sanitary rules that govern at the time or other causes of force majeure. These modifications will not, in any way, generate the right to claim any compensation or indemnification by the participants.
23 Registration as a candidate in the Seventh World Tapas Competition – City of Valladolid implies knowledge and acceptance of these Regulations.

If there is any inconvenience or restriction in the free movements of citizens from certain countries to Spain or the mandatory quarantines on their return to the country of origin, the SMTVA reserves the right to modify the general or particular conditions of the competition and the participation of each of the finalists.
